STIR-FRIED BEAN CURD WITH PRAWN - let's cook with love ;)


Thanks to LOVE for this delicious dish, we really enjoyed it!



Below is the original recipe - Enjoy!

Chinese Celery with Carrot & Bean Curd Stir-Fry

Ingredients :~
  • 1 carrot ~ cut lengthwise
  • few stalks of chinese celery ~ cleaned and cut lengthwise ( I replaced this with prawns )
  • 2 firm tofus ~ cut into 6 smaller pieces and fried
  • 3 garlic cloves ~ chopped
  • 2 cm ginger ~ chopped
  • 1 onion ~ sliced
  • 1/2 capsicum ~ sliced
  • 1-2 tbsp oyster sauce
  • 1 tsp hoisin sauce
  • salt
  • vegetable oil
Cooking Method :~
  1. Heat oil. Saute garlic, ginger, onion and capsicum till fragrant.
  2. Add carrot, oyster sauce, hoisin sauce and salt. Stir together awhile.
  3. Add celery and fried bean curd, give a quick stir and dish out. Done!

QUICK AND EASY ENCHILADAS - arriba! arriba!


Beef Enchilada
200gm ground beef
2 onion - finely diced
grated cheddar cheese - but I had forgotten the cheese which was on the counter top :(
8-10 corn tortillas or you may use the instant "capatti" dough that's readily available off supermarket shelves (like what I did) - tak suka bau original tortilla dough :)
enchilada sauce*

Brown ground beef and onion together in skillet. Add enchiladas sauce* and bring to boil. Set aside. Warm tortillas in microwave until soft, usually about a minute or so (if its the capatti dough, then it's already soft - so skip this part). Put small amount of meat and onion mixture on tortilla, roll up and place into baking dish. Do this with all tortillas. Top tortillas with grated cheese (or you may skip this part too). Bake at 200C for 20 minutes. Pour remaining enchilada sauce over cheese and tortillas. Top with remaining cheese. Enjoy!

Enchilada Sauce
3 tbs vegetable oil
1 tbs chili powder
2 cups chicken stock
5 tomato- diced
1 teaspoon dried oregano
1/2 teaspoon salt
1 ripe avocado - finely diced
1 bell pepper - diced
salt to taste

In a medium saucepan heat oil, add flour, smoothing and stirring. Cook for 1 minute. Add chili powder (or cayenne pepper powder) and cook for 30 seconds. Add stock, tomato, bell pepper, avocado, and oregano. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. Adjust the seasonings.

SELAMAT JALAN Tokoh Rujukan Para WALI ALLAH - catatan seorang sahabat


Dengan suasana masih gundah dan berkabung atas Mangkatnnya Al Arif Billah Al Qutb Alhabib Abdul Qadir bin Ahmad Assegaf rahimahullah di Jeddah, maka kamis sore 13 Mei 2010 menyusul pula teman seperguruan beliau, Al Arif Billah Alhabib Ali bin Jakfar Alaydrus rahimahullah.

Beliau sudah dianggap guru rujukan bagi para ulama besar dan para ahli makrifah billah khususnya para habaib terkemuka di dunia, sebagaimana Al Arif Billah Alhabib Hasan bin Abdullah Assyatiri rahimahullah, Al Allamah Al Musnid Alhabib Muhammad bin Alwi Al Malikiy Rahimahullah, juga para Tokoh ulama habaib saat ini seperti Al Allamah Al Musnid Alhabib Umar bin Hafidh, Al Allamah Al Musnid Alhabib Salim bin Abdullah Assyatiri, Al Allamah Almusnid Alhabib Zein bin Ibrahim bin Smeith, dan banyak lagi para tokoh Makrifah billah dan para Musnid Hadits berkunjung silaturahmi pd beliau, tiadalah satu dari mereka kunjung ke Malaysia mestilah bersilaturahmi pada beliau.

Beliau orang yg sangat sederhana, dengan rumah yg sangat kecil, sempit dan tergolong rumah dari rakyat jelata kalangan fuqara, ruang tamunya tak pernah kosong dari ratusan botol air aqua dari para tamu yg meminta air doa dari beliau, beliau sangat santun pada para tamu dari segala kalangan, kalangan kaya, miskin, ulama, awam, dan siapapun, jika mereka kunjung pada jam makan, maka tak mungkin tamunya diizinkan pulang sebelum makan bersama beliau, dan salah satu sifat rendah hati yg sangat mengagumkan pada pribadi beliau adalah selalu meminta doa dari tamunya, tak pernah mau beliau berdoa kecuali tamunya yg berdoa, jika tamunya tak mau berdoa maka tak diizinkan pulang, demikian santun budi pekerti beliau.

Ayah beliau Adalah Al Arif Billah Al Musnid Al Allamah Alhabib Jakfar Alaydrus, seorang yg sangat memanjakan Guru Mulia Al Musnid Alhabib Umar bin Hafidh ketika masih bocah. Dan ayah beliau ini terkenal sekali dan masyhur dikalangan para wali Allah swt, ayah beliau dimakamkan di pekuburan Zanbal, di samping Makam Qutbinnufuus Al imam Abdullah Alaydrus Akbar bin Imam Abdurrahman Assegaf, di kota tarim Hadramaut Yaman.

Al habib Ali bin Jakfar alaydrus ini pernah lama tinggal di Subang Jawa barat, Indonesia dimasa kecilnya, suatu pengalaman, bahwa saya sering kunjung pada beliau jika kunjung ke Malaysia, beliau sangat memanjakan saya jika pendosa ini datang, beliau selalu tersenyum gembira, lalu saya minta doa beliau maka beliau berdoa, berbeda dengan tamu lain yg selalu beliau menolak untuk berdoa kecuali tamunya yg mesti berdoa, namun permintaan saya tak ditolak oleh beliau, seraya mengangkat tangannya setinggi tingginya hingga keatas kepala, kedua telapak tangannya dipadukan, dan wajah beliau menunduk.., lalu suara rintih keluar dari bibirnya tak bisa saya pastikan apa yg diucap, benar benar gerakan doa yg menggambarkan posisi yg sedang sangat mengemis pd Yang Maha Luhur…, belum pernah saya lihat orang berdoa dg posisi sekhusyu'dan seperti ini dalam merendahkan diri pada Allah swt..

Setelah itu saya pamitan, padahal saya tahu kebiasaan beliau yg saya dengar dari semua orang yg mengunjungi beliau, jika waktu makan tak akan diizinkan pergi, saya berkata lembut : “saya pamit wahai habib..”, beliau menunduk dan berkata lembut pula : “tidak makan dulu kah?”, saya menjawab : “saya pamit jika habib ridho”, beliaupun berdiri mengizinkan kepergian kami, lalu terbersit dihati saya : “aku terbebani hutang sangat besar karena masalah perluasan dakwah di Indonesia, mudah mudahan kedatanganku kesini bisa membuat Allah menyelesaikan masalah hutang2ku.., beban beratku ini kutumpahkan pada habib Ali, semoga Allah swt meringankanku”, demikian renungan saya sambil melangkah keluar kediaman beliau..

Saat itu saya tidak sendiri, ada beberapa orang yg bersama kami, mereka kagum dan berkata : “kami sering kunjung kesini, belum pernah habib Ali mau berdoa kecuali saat kamu yg memintanya, belum pernah habib Ali izinkan kami pamitan diwaktu makan kecuali saat kamu yg minta izin pulang..”, dan salah satu diantaranya adalah seorang pengusaha sukses, maka saat kami sudah keluar rumah, beliau memanggil orang itu, dan membisikinya sesuatu, lalu beliau masuk rumah..

Orang tsb mendatangi saya, dan berkata : “Habib Ali berkata pada saya, kamu punya hutang dakwah yg besar dan berat yg harus dibayarkan, saya diperintah habib ali untuk melunasi semua hutangmu”

Saya kaget dan berpaling pd beliau, ternyata beliau sudah masuk rumah menutup pintu.., subhanallah..

Beliau selalu memanjakan saya jika pendosa ini datang, sekali waktu saya datang silaturahmi, kepala ini penuh dengan permasalahan dakwah yg bagai gunung menindih, kesibukan, masalah perluasan, pengaturan dll, maka saya datang dg lemah, duduk dihadapan beliau, maka beliau diam, diam, lalu menggeleng2kan kepala beliau, lalu menangis, dan berkata : Berat… berat.., sambil mengipasi dirinya dg kipas ditangannya dan mengipasi saya pula.., tak lama saya pamit begitu saja, beliau berdoa lagi, belum sampai saya di Jakarta kecuali seluruh masalah dakwah telah selesai.

Pernah suatu kali Al Allamah Almusnid Al Habib Muhammad bin Alwi Al Malikiy rahimahullah kunjung pada beliau, sepanjang jalan Alhabib berbicara tentang rindunya pd Rasulullah saw, maka ketika sampai dikediaman beliau, maka semua tamu tidak diperkenankan masuk, kecuali Al Allamah Alhabib Muhammad Al Malikiy, mereka masuk berdua cukup lama, lalu keluarlah Al Allamah Alhabib Muhammad Al Malikiy rahimahullah dg airmata yg bercucuran.., seraya berkata : hajat saya sudah terkabul… terkabul.. terkabul.., sambil menutup wajah beliau tanpa berkata kata pada siapapun atas apa yg terjadi didalam

Kamis sore dinihari 13 mei Al Arif billah Alhabib Ali bin Jakfar Alaydrus rahimahullah menghembuskan nafas yg terakhir… khususnya seluruh para habaib di Malaysia gempar, dan dunia para habaib sepuh pun gempar terkena kabar duka ini..

Rasul saw bersabda : “Para shalihin wafat satu demi satu, tersisalah sisa sisa sampah tak berarti dimata Allah, dan Allah swt tak perduli lagi dg keadaan mereka” (Shahih Bukhari).

Maksud hadits ini adalah keberadaan para shalihin menguntungkan bumi, mereka terus berdoa untuk keselamatan ummat, pengampunan untuk para pendosa, terus beribadah pada Allah swt hingga Allah swt banyak menyingkirkan musibah sebab doa dan rintihan mereka, maka jika mereka tiada, Allah swt tak lagi melihat sisa penduduk dunia karena mereka tak perduli dg Allah swt, maka Allah swt tak perduli lagi musibah musibah yg akan diturunkan pada mereka, entah musibah atau kenikmatan, entah cobaan atau kekacauan..

Rabbiy,, bangkitkan para pengganti dari para shalihin kami yg terus wafat dan wafat, munculkan kembali generasi para shalihin yg menjadi paku penahan musibah bagi ummat, muliakan Guru tercinta yg mulia ini dipangkuan Kelembutan dan Keridhoan Mu, dan sertakan kami dalam pembagian waris dari keluhuran beliau disisi Mu, amiin..

BAZ LUHRMANN - everybody's free to wear sunscreen :)


Ladies and Gentlemen of the class of 1996...Wear Sunscreen

If I could offer you only one tip for the future, sunscreen would be it. The long term benefits of sunscreen have been proved by scientists, whereas the rest of my advice has no basis more reliable than my own meandering experience. I will dispense this advice now.

Enjoy the power and beauty of your youth; oh never mind; you will not understand the power and beauty of your youth until they have faded. But trust me, in 20 years you'll look back at photos of yourself and recall in a way you cant grasp now how much possibility lay before you and how fabulous you really looked...You're not as fat as you imagine.

Don't worry about the future; or worry, but know that worrying is as effective as trying to solve an algebra equation by chewing bubblegum. The real troubles in your life are apt to be things that never crossed your worried mind; the kind that blindside you at 4pm on some idle Tuesday.

Do one thing everyday that scares you.

Sing.

Don't be reckless with other peoples hearts, don't put up with people who are reckless with yours.

Floss.

Don't waste your time on jealousy; sometimes you're ahead, sometimes you're behind...the race is long, and in the end its only with yourself.

Remember the compliments you receive, forget the insults; if you succeed in doing this, tell me how.

Keep your old love letters, throw away your old bank statements.

Stretch.

Don't feel guilty if you don't know what to do with your life...the most interesting people I know didnt know at 22 what they wanted to do with their lives, some of the most interesting 40 year olds I know still don't.

Get plenty of calcium.

Be kind to your knees, you'll miss them when they're gone.

Maybe you'll marry, maybe you wont, maybe you'll have children, maybe you wont, maybe you'll divorce at 40, maybe you'll dance the funky chicken on your 75th wedding anniversary...what ever you do, don't congratulate yourself too much or berate yourself either - your choices are half chance, so are everybody elses.

Enjoy your body, use it every way you can...don't be afraid of it, or what other people think of it, its the greatest instrument you'll ever own.

Dance...even if you have nowhere to do it but in your own living room.

Read the directions, even if you don't follow them.

Do NOT read beauty magazines, they will only make you feel ugly.

Get to know your parents, you'll never know when they'll be gone for good. Be nice to your siblings; they are the best link to your past and the people most likely to stick with you in the future.

Understand that friends come and go, but for the precious few you should hold on. Work hard to bridge the gaps in geography in lifestyle because the older you get, the more you need the people you knew when you were young.

Live in New York City once, but leave before it makes you hard; live in Northern California once, but leave before it makes you soft.

Travel.

Accept certain inalienable truths, price will rise, politicians will philander, you too will get old, and when you do you'll fantasize that when you were young prices were reasonable, politicians were noble and children respected their elders.

Respect your elders.

Don't expect anyone else to support you. Maybe you have a trust fund, maybe you have a wealthy spouse; but you never know when either one might run out.

Don't mess too much with your hair, or by the time its 40, it will look 85.

Be careful who advice you buy, but be patient with those who supply it. Advice is a form of nostalgia, dispensing it is a way of fishing the past from the disposal, wiping it off, painting over the ugly parts and recycling it for more than its worth.

But trust me on the sunscreen...

CHEDDAR CHEESE BREADSTICK



2 cups all-purpose flour
1 tbsp instant yeast
1/4 tsp salt
2 tbsp sugar
1 cup shredded cheddar cheese
2/3 cup milk
1/3 cup butter (melted)
1 egg

Topping: 1/2 cup shredded cheese and 2 tbsp of sugar

PCS Animation - Removing food from oven

Heat oven to 200 degrees C. In a medium sized bowl combine all ingredients, and stir until mixture no longer sticks to bowl. Let it rest for 20 minutes. Then knead dough lightly. Press dough lightly in greased pan. Cut vertically then sprinkle with shredded cheddar and sugar. Bake for 15 to 20 minutes or until lightly golden brown.
