FUN-FILLED SUNFLOWERS...fun cookies for kiddies!



Ode To Sunflowers

Of all kinds of flowers, the Sunflower is an absolute exception! An incredible part of His creation, the Sunflower praises the Creator in glorious celebrations across the hours of the day. This is a testimony to the greatness of His creations. Never missing a moment, never missing a position, the Sunflower dutifully observes the sun and changes with it. Glorifying Allah in all we do, to worship Him in all glory shining bright! If we open, every little thing around us shall communicate in us again upon the glory of His creations! Ramadhan Kareem and a bright joyous Eid Mubarak wishes to all :)

1 1/2 cup self rising flour
2 cups coarse cornflakes
1 1/2 cups almond powder
150gm butter
100 gm castor sugar
1/2 tsp vanilla essence
1 egg

Sift flour and mix with coarse cornflakes and almond powder. Cream butter and sugar until mixture turn light and fluffy. Beat in egg and vanilla essense. Fold in sifted flour mixture and mix well. Roll out dough and cut out desired shapes using cookie cutter and place it onto greased pan. (I used flower pineapple tart cutter so that I could later arrange the cornflakes on the flower petals and then spoon in some chocolate rice in the deeper center too) Bake for about 12 minutes in 170 C oven.

SOMEWHERE OVER THE RAINBOW.....& fun time in the kitchen :)



Inspired By The Rainbow : Rainbow Edible Bowl & Spoons


Essentially nature inspires us with endless beauty and splendor. There’s an old adage: at the end of every rainbow, you’d find yourself a bucket of gold. I just think that we make the buckets of gold with all kinds of inspirations and gifts life brought us. But if we do not stop to give thanks and appreciations for nature’s gift, we may miss our buckets here and there in this journey. Observing a beautiful rainbow way up high a few days ago, we were inspired to come up with our own rainbow theme fun time in the kitchen. We give thanks for all we have; peace, security and wellbeing. Our prayers and well wishes go out to all our friends affected by the tsunami calamity in Japan. May they be strong and rise up again to better days ahead.

1 - Make dough into small balls.
2 - Roll out dough and cover the back of the spoon with dough.
3 - Cut out the edges and prick/press air bubbles out.
4 - Bake for about 5 minutes or until it loosens from the spoon.

PLAIN OL' BISCOTTI....yet to have your favorite things added to it :)


Taste Good With Coffee...



2 cups flour
2/3 cup sugar
1/2 cup butter
1 large egg
1 tsp vanilla extract
2 tsp baking powder
1/4 tsp salt



In a large bowl beat sugar, butter, vanilla, eggs and salt with spoon. Add flour and baking powder and mix well...(*you may add in nuts, raisins and light cinnamon spices if you wish to...) Divide dough into half and shape each dough into log on cookie sheet. Bake for about 30 minutes or until center is firm to touch. Leave to cool on cookie sheet for 10 minutes.

Cut crosswise into 1/2-inch slices with serrated knife. Place cut sides down on cookie sheet. Bake about 15 minutes. Turning once, until crisp and edges turn light brown. Then, remove from cookie sheet to wire rack. Cool completely and ready to serve...Enjoy! :))

MELT IN YOUR MOUTH COOKIES :))


2 cups butter
1 1/2 cup confectioners sugar
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/2 cup cornstarch

Preheat oven to 180C. Cream butter, confectioners sugar and vanilla. Sift flour, cornstarch and add to creamed mixture. Mix well until a dough is form. Flatten the dough and cut with cookie cutter. Place cookies carefully on greased cookie sheet. Bake for 12 to 14 minutes. Done! :))

PIE CRUST COOKIES - spreading love with nutella!


1 1/2 cups flour
1/2 tsp salt
2 tbsp butter
1/2 cup milk


Sift flour and salt into a bowl. Rub butter in with your fingertips until it resembles fine breadcrumbs (or close enough :). Create hollow space in center of flour and butter mixture, and pour in nearly (not all) all of milk at once. Add the remaining milk only if necessary and mix to a soft dough. Turn out onto a flat surface. Make balls from dough and roll out to 8-10cm rounds. Place it onto the baking pan. Bake at 200 degrees for 10 minutes. Once the cookies are completely cool, spread a generous amount of Nutella Spread and sprinkle some roasted almond and then you sandwich them together. Enjoy!

PERSEID METEORS COOKIES - Our Solar System ;)



2 cups flour
1/2 tsp. baking soda
3/4 tsp. salt
1/2 cup shortening/butter
1 cup brown sugar
1 cup of nestum cereal
1 egg
2 tsp. vanilla

Put the flour, baking soda, and salt in a medium-sized bowl. Mix them together with a whisk to combine. Put the shortening in the bowl of your stand mixer (or in a large mixing bowl, if you’re using a hand-held mixer). Beat it on medium-high for a few minutes to fluff it up. Scrape down the sides of your bowl with a spatula. Toss in the brown sugar. Add the egg and vanilla extract. Beat on medium-high to combine well. Add in the cereal and the flour mixture. Beat quickly to combine well. Stop mixing when the dough just comes together and all the flour is mixed in and a dough is form. Dust flour over a surface and roll out the dough to ½cm thick. Use the star-shaped cutter to cut out stars in the dough, then use a spatula to lift the stars onto the baking tray. Sprinkle a little bit of cereal on top. When you’re ready to bake, preheat your oven to 350 degrees. Line a sheet pan with parchment paper or a silicone baking mat.Space the cookies out on your prepared sheet pan.Bake at 160 degrees for about 10 minutes.You want the cookies to be just golden brown.Let them cool on the pan for about 5 minutes, then transfer them to a wire rack to finish cooling. Enjoy!

The Perseids is the name of a meteor shower associated with the comet Swift-Tuttle. The Perseids are so-called because the point they appear to come from, called the "radiant belt" that lies in the Constellation Perseus that is thousands of light years away from our own Milky Way. The show of Perseids is always best seen in the Northern Hemisphere from July to August. In Malaysia, it would be visible on crispy clear skies from 1 am to 4am, sometimes as many as 60 meteors per hour. In my younger days then, I would always stay up to catch the Perseids from the Northern Hemisphere, and this year we managed to spot a few of Perseid's show streaking way up in the clear breezy night sky way past midnight!

Truly, Allah is Great. Allahuakbar!

HOMEMADE COOKIES ON A SUNDAY - especially for LIND :)



It's Sunday in quiet "Deliah's Deli" :) and I had a packet of dried fruits lying around doing nothing in the fridge for quite sometimes now, plus I was looking for a recipe to incorporate them all in the mixer bowl and put this and that together; hence this recipe :) The taste of this cookie was real good with a little bit tartness from the dried fruits which went along pretty well with the sweetness from the cookie.

INGREDIENTS:
All-purpose flour, 1 cup.
Dried fruits, ½ cup.
Sugar, ½ cup.
Salt, a pinch.
Unsalted butter, ½ stick.
Egg, 1 *optional.
Vanilla essence, a few drops.
Baking soda ¼ teaspoon.
Baking powder, 2/3 teaspoon.

PREPARATION:
Sift in the all-purpose flour, baking powder, baking soda, salt together. Melt the butter and add them to a bowl. Break an egg into the bowl and beat the egg along with the butter. Add the sugar now and keep beating until a creamy consistency is obtained. Add the sifted flour slowly and keep mixing and until a dough is formed. Make small lemon-sized balls from the dough. Place the dough balls on the baking sheet and gently press them into small cookies. Sufficient space should be left between each cookie. Bake them at 160 c degrees for about 10 minutes. Take the baking dish out of the oven and let the cookies cool and enjoy.

FRESH GINGER COOKIES


2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons grated fresh ginger
3/4 cup butter - softened
1 cup white sugar
1/4 cup molasses/brown sugar
1/4 cup choco powder1 egg
1 cup white sugar

In a large mixing bowl, combine flour, soda, choco powder and salt. In a separate bowl, beat ginger, butter, and 1 cup sugar until light and fluffy. Beat in molasses and egg. Gently fold in flour mixture until just combined. Chill for 1 hour. Preheat oven to 350 degrees F (175 degrees C). Roll dough into 1 1/2 inch balls and gently press them and then roll them in sugar. Place 2 inches apart on baking sheets.Bake for about 15 minutes. Centers will be slightly soft. Let stand on cookie sheets 1 minute and remove to racks to cool completely.

5 MINUTES MUESLI BAR :)





The easiest muesli bar on earth and this tasty &
chewy muesli bar is delicious, simple and nutritious too :)

Ingredients:
1/2 cup of desiccated coconut, 1 cup of corn flakes,1 cup nestum(wheatgerm) and oat, 1/2 cup of honey or sugar,100 grm butter, 1/2 cup of raisins, 1 cup sunflower kernels and 1/2 of rice krispies. * Ikut suka nak letak apa-apa.

Preparations:
Grease square baking tin then set aside. Cook the butter, honey and sugar*optional in a small saucepan and stir for 2 to 3 minutes or until sugar has dissolved. Add butter mixture to dry ingredients. Stir well then quickly pour the mixture into the tin. Press the mixture down firmly and evenly. Allow to cool ( I put mine in the fridge) and then chop into small squares or rectangles and yum,yum,yum! Enjoy!
