Have been quite busy lately :) But never too busy for blogging :)))) hehehe! Anyway, this was what we had for brunch today : lamb in tomato stew with home made garlic bread and linguine.
500-600g lamb meat - diced
8 shallots - diced
1/3 cup cooking oil
1 tsp chili powder
1 inch ginger - minced
4 garlic - minced
2 fresh tomatoes - diced
3 tbsp allspice (5 spices may also do)
375 ml of traditional pasta sauce
some fresh coriander leaves
400 ml water (or you may add or reduce according to your taste)
Brown the shallots, garlic and ginger in oil. Add lamb and stir thoroughly. Then, add all other ingredients, cover and leave to simmer for 40-60 minutes. Serve with pasta of your choice and some home made garlic bread. It would be nice if you could complement all of that with a glass of freshly squeezed cooling orange juice - Enjoy!! :))
