It is quite an obligatory substance for legendary curry recipes and it goes without saying that without curry leaves, curry is to be tasteless. From Indian soil to the land of Mediterraneans, karuvepillai has made quite a name for itself, for its taste, a one of a kind fragrant and certainly too for its medicinal properties.
Apart from its rich iron values, the curry leaves are also widely used as herbs in traditional Ayurverdic remedy. Their known medicinal properties include anti-diabetic, antioxidant, antimicrobial, anti-inflammatory and anti hypercholesteromic (an agent that helps to control and maintain a healthy cholesterol level).
To quote an old Persian proverb on honey (halva); "it is not by saying halva-halva, that sweetness will come to mouth". It means that it is not just by merely saying honey-honey, sweetness will come to the mouth ;)
Blend onion, garlic, ginger and fresh karuvepillai leaves (curry leaves/daun karipulai). Fry in oil and add beef curry powder. Stir well and then add ground beef, carrot, tomato (or a bit of tomato paste) and finely chopped potatoes. You may add chili powder for extra heat. Cook till beef and potato becomes almost mashed. Add in salt and beef stock. Fill each 4x2 inches ready made puffs with curried beef mix. Fold the squares into two. Use fork to press down the edges. Neatly lay the puffs into an oiled/buttered pan and brush the top of each with beaten eggs and honey. Bake at 200°C for 25 minutes. Serve.
ENJOY!
