SHEPHERDS PIE...for dinner.



1 onion, diced
1 tablespoon olive oil
1 lb. lamb, minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube (Maggi or Knorr)
1 lb. chopped tomatoes
1 tablespoon corn flour
1 small can of tomato puree
Salt and pepper to taste
Finely chopped celery leaves


2 lb. potatoes peeled, boiled and mashed in 1 cup milk/Nestle Evaporated milk and margarine/butter. This is the topping for the pie.This is how to make English shepherds pie, made with lamb. If made with beef, it would be known as Cottage Pie.

Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and powdered stock cube, and then cook until the mince lamb is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.


Put the filling into a deep dish, then top with the mashed potatoes, spread evenly and put under a warm grill (broiler) until the top is just lightly brown and crisp. In my oven its 200 degrees and 30 minutes. Immediately after removing from oven, you may top with any type of cheese you like. Serve with plenty of home made coleslaw. Enjoy!

FRESH GINGER COOKIES


2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons grated fresh ginger
3/4 cup butter - softened
1 cup white sugar
1/4 cup molasses/brown sugar
1/4 cup choco powder1 egg
1 cup white sugar

In a large mixing bowl, combine flour, soda, choco powder and salt. In a separate bowl, beat ginger, butter, and 1 cup sugar until light and fluffy. Beat in molasses and egg. Gently fold in flour mixture until just combined. Chill for 1 hour. Preheat oven to 350 degrees F (175 degrees C). Roll dough into 1 1/2 inch balls and gently press them and then roll them in sugar. Place 2 inches apart on baking sheets.Bake for about 15 minutes. Centers will be slightly soft. Let stand on cookie sheets 1 minute and remove to racks to cool completely.

MIE KOCOK - Ala Bandung



Bahan-bahan:
1-2 keping dada ayam-rebus sehingga empuk-potong dadu
200 grm udang kecil-kupas kulit-rebus untuk jadikan stok
250 mi kering-celur dan tiris/tos airnya
1 keping tauhu-goreng dan potong dadu
3 biji telur rebus-kupas-potong 4*optional
100grm taugeh-celur-tiriskan air
1 sudu tepung ubi/jagung-larutkan dgn sedikit air
3 ulas bawang putih-hiris halus
5 ulas bawang merah-hilis halus
2 batang saderi-hiris
2 biji cengkeh
1 inci halia-hiris
1 sudu teh serbuk lada putih
2 sudu besar minyak masak untuk menumis
Keropok sagu-atau sebarang jenis keropok yang sudah digoreng

Cara-cara:
Dalam minyak panas tumis bawang merah/putih sampai kekuningan. Masukkan stok ayam dan udang-air rebusan ayam dan tadi. Masukkan halia yang dihiris. Masukkan cengkeh/serbuk lada putih * bahan-bahan ini boleh juga diganti dengan rempah sup. Kemudian, masukkan garam dan gula-mengikut kesesuaian. Masukkan tepung jagung/ubi yang telah dilarutkan tadi sehingga kuah agak pekat. Dalam mangkuk masukkan mi, taugeh, tauhu, ayam (rebus), udang(rebus), daun saderi dan telur. Tuangkan kuah yang masih panas ke dalam mangkuk dan tabur bawang goreng dan keropok. Hidang dengan limau nipis dan sambal (cili merah dan cili padi ditumbuk halus dan dicampurkan sedikit air masak).

Nota:Boleh juga guna air rebusan daging/tulang lembu.
