HOMEMADE BOUNTY BARS :)

In my younger days I used to buy these wonderful 'Bounty Bars' at vending machines, and on a student's budget, sometimes that's the only luxury I could afford for the day :) ..but now I could easily make this at home and so could you :) If you want more or thicker bars, you may double up on the ingredients. From the image above, you can probably tell that I didn't wait overnight for the coconut to set in with the mixtures and as a result, things looks slacking here and there :D Well you know, we have just got to please the noisy customers here at Deliah's Deli :)

200ml heavy cream or you may just opt for sweetened condensed milk
8 tablespoon sugar (reduce sugar if you use sweetened condensed milk)
3 tablespoon margarine
1 teaspoon vanilla extract
100 gm dessicated coconut
semi-sweet chocolate for topping - melted

Put heavy cream, sugar and margarine in a pot. Heat everything until boil. Remove from heat and stir in coconut and vanilla extract. Pour in the coconut mixture in a lined baking pan and refrigerate overnight. The next day, cover the coconut with melted chocolate and let it cool until the chocolate is totally set in the fridge. Cut into rectangle and serve.

BUAH NAU HALWA KABUNG - palm fruit in coconut jelly :)

This is my favorite quick, simple and almost non-recipes...because I'm really just opening a can of palm fruit and a packet of coconut jelly. Cut palm fruit into cubes and put into mould. Cook the coconut jelly as directed in the package. Pour jelly into mould and leave to cool. Enjoy!

WORLD'S BEST ABAH - Happy Father's Day! :)

A LETTER IN TIME TO MY DEAREST FATHER.

Today I spent a lot of time reading about fathers’ day. Its father’s day right here and now, and my mind raced far back into time to find our home again.

It was not easy raising us all; that I readily acknowledge today and perpetually admits. But you did such an incredible job beyond the expectations of many. You created a solid platform for us to rise and spring forth to find and become our best in the world today.

Today we tell your grandchildren of who you were apart from just the grandfather they knew you then. We told them of your journey from an impoverished childhood to great wisdom and success in the path of education that you have pursued tirelessly. Your accomplishments have never been forgotten. Through education you elevated all of us into who we have always been and today we keep telling your grandchildren that they too may one day track your path into prominence by virtues of their own honest hard works.

The sight of you cooking your signature dish; Mutton Bamya in the kitchen over 30 years ago lives within my mind for all eternity. I didn’t know then that I would remember that happy day for the rest of my life! The memories when all of us would pray together before dinner and then those extra mathematics drilling right after dinner could still even today whack alertness into my focus and mind!

I guess what I’m trying to say, is what every son and daughter wants to say to their father today. Honoring a Father on Father’s Day is about more than a father who brings home a paycheck, shares a dinner table, and attends school functions, graduations, and weddings. It isn’t even so much about cooking and teaching us mathematics formulas, and the finer art of mental focus. It’s more about unconditionally loving your children who were sometimes snotty and stubborn, who acted like they knew everything and won’t listen to anyone. It’s about respect, and sharing, and acceptance, and tolerance, and giving, and taking. It’s about loving someone more than words can say and it’s about showing us our best and then telling us to just keep being our best in the world.

Thank you from the bottom of our hearts. We love you dearest Abah and miss you so much...and I sent this in a letter that I have written especially for you today on father's' day. A letter I sends back in time, into the warm corners of my mind with much love and gratitude to The World's BEST Abah :)

Al Fatihah.

EGG IN A BASKET - voila!

"Egg in a basket", also known by variety of other names including moon egg, camper's egg, birds nest, one-eyed Jack, bull's eye and..etc..etc..It is suppose to be an egg, fried in a hole, out of a slice of bread - but I made it 2 slices of bread for ease of preparations. This is such an easy and quick dish to prepare..and I'm sure many of you have tried this before...Preparation typically begins by cutting a circular hole in the center of a piece of bread with a cookie cutter or upside down glass, the middle of the 1st bread...the cut-out piece can be toasted too...yummy! Spread butter on one side of the bread then lay the 2nd piece on it. Spread some butter on a baking pan and place the prepared bread slices on it . Then, break an egg into the carved out hole...and then put everything in the oven. When the egg is almost done, you may sprinkle some oregano leaves, cubed tomato, and mozzarella/cheddar cheese on top of the egg and continue cooking until the bread turns brown and the egg cooks...Enjoy it with a cup of hot coffee :)
