CAJUN CHICKEN WITH PINEAPPLE SAUCE plus spaghetti alfredo and some homemade salsa

CAJUN CHICKEN & PINEAPPLE SAUCE :)

For some really simple and tasty flavor of the New Orleans Creole, just season chicken parts with the mixture below:

1 tbsp paprika
1 tsp dried oregano
1 tsp finely grounded thyme
1/2 tsp salt
1/4 tsp cumin
1/8 tsp cayenne pepper (cili hidup or just use chili powder)

Season with chicken and then bake at 250 Celsius for roughly about 45 minutes. Time is heavily dependent on your oven layout really.

Pineapple sauce is really easy. It is going to taste sweet and yet sour and some what spicy. Finely diced 1 can of pineapple, finely chopped about 1 or two fresh cayenne pepper, heat up pan, melt butter, add in the chopped pineapple and the finely chopped cayenne pepper, add in some Romano cheese and melt it in nicely with the left over pineapple juice which came from the can. Bring to a boil and voila! It is ready :) No salt or sugar is needed for the sauce.


SPAGHETTI ALFREDO

I have made my pasta light and easy as you can see, going easy with the cheese here and there. But you may go for really thick and creamy sauce, just follow the recipe below:

2 cups whipped cream, 1/4 cup butter, 1/4 cup parmesan cheese, salt and white pepper, fresh and finely chopped parsley, some finely grounded dried oregano, generous amount of parmesan, same with the Romano. Heat everything a large saucepan over high heat until very hot. Add just enough cold milk to cover the bottom of the pan. Continuously stir to avoid the cream and cheese from burning and scorching at the bottom of the pan. Remove the pan from heat and pour everything over cooked pasta in a bowl and mix everything well. Now serve hot :)


HOMEMADE SALSA

3 tomatoes, seeded, coarsely chopped,1 small onion, 1-2 jalapeno peppers or red chillies finely chopped (red chillies if you want it hotter) , 2 tbs lime juice, 1-2 tbs snipped fresh cilantro and salt to taste. Combine everything and season to taste with salt. Serve.
