In my younger days I used to buy these wonderful 'Bounty Bars' at vending machines, and on a student's budget, sometimes that's the only luxury I could afford for the day :) ..but now I could easily make this at home and so could you :) If you want more or thicker bars, you may double up on the ingredients. From the image above, you can probably tell that I didn't wait overnight for the coconut to set in with the mixtures and as a result, things looks slacking here and there :D Well you know, we have just got to please the noisy customers here at Deliah's Deli :)
200ml heavy cream or you may just opt for sweetened condensed milk
8 tablespoon sugar (reduce sugar if you use sweetened condensed milk)
3 tablespoon margarine
1 teaspoon vanilla extract
100 gm dessicated coconut
semi-sweet chocolate for topping - melted
Put heavy cream, sugar and margarine in a pot. Heat everything until boil. Remove from heat and stir in coconut and vanilla extract. Pour in the coconut mixture in a lined baking pan and refrigerate overnight. The next day, cover the coconut with melted chocolate and let it cool until the chocolate is totally set in the fridge. Cut into rectangle and serve.
